Double Decoction: Infuse to 145F, hold 20 min.
Pull first 1/3 decoction, Heat to 158F, hold 20 min, raise to boil, boil 10 min. Return decoction to mash to get 156F. Rest 30 min, pull 1/4 decoction, Raise to boil, Boil 10 min, return to mash to get 165F. Recirculate 9 gallons, collect wort with first wort Saaz hops.
Bring to boil, add Perle bittering hops, boil 65 min, 2 whirlfloc at 55 min, add aroma Saaz hops at 58 minutes. Got 10.5 gallons in fermenters, 3 qts used to make 4 one qt yeast starters (pressure cook).
High efficiency (81%) due to decoction mash. Overshot OG.
