12-2020:
- 1st running: 17.5P
- Mid-running: 15
- Late drip: 8
- Pre-boil gravity 13.5/14P or 1.056
- Post-boil gravity 1.078 (!!!)
- Top up gravity 1.065
- Pitched at 74F
- Added DH between day 2 and 3 in muslin bag while on tail-end of primary ferm
- did not take taste/pull, gravity reading, or cold crash to avoid oxygen
- Moved to keg on day 7.
- added 3oz dry hop charge to SS spider and purged keg before racking
- Force carbed at 25psi for 12 minutes. Dropped to ~10psi
