Bottled Bulk primed. Since its capped, at about 14 PSI at 17C, I guess there are already about 1.4 Volumes there. Adjusted Beer temp in carb calculator to get about 1.4 volumes residual, then plugged in a goal of 2 volumes (mid range for style, low enough I hope we're safe with the Brett). Calculated 43 g Dex, added to keg using bottle alongside a big charge of Brett C. Probably was an overpitch, I had done a 500 mL starter from a new vial from WL. Then I decanted all the top off for this, and poured the thickest part back into the vial for next time. 23x 330 8x 500 9x 740 1x 1000 + 3x 500 and 1x 750 from kegging day that had no DH nor brett

Mild Malt (1.75kg) -> 1.5 kg MO + 0.25 kg Aromatic
Flaked corn -> polenta
Home made invert and caramel
FW Hops with Super Pride for hot break
Reduced boil time to 1 hr for modern malt
Subbed hops to ones in the freezer I've gotta use.
Little bit of oak chips in primary for "inauthentic authenticity"
