So I didn't think about the dry hopping changing the hop profile of a hop, so The Pride of Ringwood dry hop of 50g at Day 3 ended up giving the beer a VERY peppery flavour. Off of the taste, I get peppery, then middle I get some pretty good fruity flavours, and then at the end, a clean finish. Maybe Safale US 04 would work better with this?

I'm changing the Dry Hop to Azacca, and we will see if that brings the best out of this beer. If it still doesn't have enough sweetness, I'll switch to a Galaxy, or Mosaic.

So this beer has been something I worked on for quite awhile. It's won a homebrew contest and approval from our International Consultant for my brewery I brew for, Stockade Brew Co.

Might be my best recipe on my dashboard
