Notes

So this one is a bit different. There is no true boil here, and I'm substituting juniper berries for juniper branches. While there are lots of juniper bushes/trees in the PNW, I don't want to grab the wrong one and poison myself.

Being a Sahti, there are no hop additions. The beer is also drank right after fermentation. I didnt put in a yeast because this recipe calls for BAKERS YEAST - I will be using Fleischman's Bread Yeast. You could also use Kveik Yeast

Mash is started low and increased in 3 stages.

  1. 140 degrees for 45 minutes
    Add 1/4lb juniper berries

  2. 158 degrees for 45 minutes
    add 1/4lb juniper berries

  3. 178 degrees for 15 minutes. (This will pasteurize)
    add 1/2lb juniper berries and 3 sprigs of rosemary
