Mash was hard. I should have used some rice hulls... the flaked wheat and barley became oat meal and I had a hard time moving the temperature around as the mash wouldn't let water through. I tried to mash with a high temp, but got the GB a little all over the place. 152-156F for 60 minutes, but did about 30 minutes before fiddling around trying to get the temp up and then let it sit at 157F after pulled the recirculation while I waited for the sparge water to heat. |

Took 53 minutes to mash out as the GB was pretty stuck. |

Boil was super simple, nailed all my targets. I let the kettle sit for the rest of the evening before I started the boil, so it had some good time to set up. |

Chilled the kettle pretty quickly and transferred to the fermenter at about 85F. Then I pitched the yeast nutrient (0.5 tsp), yeast, and clarity ferm. Dumped the two gallons of juice (~40F) on top and brought the whole temperature down to 56F. Put it in the fermentation fridge set at 66F. |

Beer was really clear and pretty to look at. Yeast came out really nicely and settled on the bottom. Volume was slightly lower than I had hoped for. Looks like it dried out more than I expected. I need to nail the mash on this one... should have tossed a bunch of rice hulls in there. The lower mash temp meant more fermentable sugars. Thankfully it doesn't taste too dry. |

Didn't quite fill the fermentor. Put the keg in the keezer and then purged the head room with co2, left it to chill over night before running it through the carbonation pump. |

After running the carbonation pump for 45 minutes I got the beer pretty well carbonated. Put it on tap to give it a try. Its very tasty, but slightly dry. I think my problem was my GB temp when mashing... I couldn't get it up to the right temp because the mash was stuck and wouldn't flow. For next time: RICE HULLS!!! |
