OG reading before pitch. Higher than expected per original recipe. Bitteness may be slightly higher than 28 IBU due to stopping boil timer until boil was reached again after inserting immersion chiller. IC was full of water when immersed, so I stopped the timer to allow wort to come to boil again. |

FG still high after 15 days primary ferment, but this brew has some maltodextrin for malt flavor, which may drive FG readings up because it is not fermentable sugars. While racking beer from fermenter, bubbles started coming from the trub, and clouded the beer some. Will likely have significant sediment in bottles after conditioning. |

Slightly elevated bitterness for my taste. However, I'm brewing a Christmas present for someone that obsessed over this beer when I brewed it before. |
