Mash 20 l water 45 minutes @ 69°C
2 hour boil
Result 10 l after three weeks of fermentation
Wyeast 3763 Roeselare Ale Blend

--- Some malt types were not available, and instead I used a combination of substitutes.
--- SMB questioned the use of hops in combination with the ale blend (it would kill off the bacteria) and relatively short fermentation time (no time for the brett to do its magic), and I switched to another yeast.
