11/18/2020: Moderately heavy body, typical for style and FG. Loads of chocolate, dark fruits, and subtle roast grains. Mid-palate is sweet, but it dries as it finishes. Head takes a heavy hand to build, but it is dense, tan and fine bubbles. Hop aroma is rather muted, consistent with style. This goes down much more quickly than expected, as I generally prefer drier styles (my son wanted to try something big for this Covid winter). If we do it again, I would try for greater attenuation. Maybe some O2 into fermenter around day 2 and hold the added sugar until day 4-5 to give the yeast a chance to first go for the malt sugars before the easier table sugar (don’t want the yeast to get fat and lazy!).
