Starter of 5-month-old A38 Juice yeast (factory package). The color of yeast was peanut butter, so not sure if it is viable. The A38 worked out just fine, so 5-month-old yeast is OK.

The first yeast starter failed. Rethinking how I bank my yeast. New idea is to create an oversized starter and half goes to brew and the other half goes to the refrigerator for the next batch. Bottom harvesting has too much trub, and not had much luck with top cropping.

Stuck mash had to stir constantly. Which contributed to the higher numbers for conversion. Ended up mashing about 15 mins longer too.

Discovered there is an overheating issue with the thermostat at the base of the kettle. So the kettle would shut off and not maintain a boil. Need to add a fan to the base of the kettle. This issue caused my process to take over an extra hour.

Whirlpool change from the recipe:
Added 1.25 oz of Citra and Galaxy
Added 2 oz of Zeus
Hops were added loose
Whirlpool temperate: started at 165 degrees and finished about 160 after 25 minutes.
Stirred every 5 minutes, and covered.

Biotransformation addition:

1 oz Citra (11 AA) (Pellet) for 8 days
1.06 oz Galaxy (14.25 AA) (Pellet) for 8 days

Added loose when fermentation slowed down SG was 1.029 and close to excepted FG of 1.018.

Tried after 3 days of bottle conditioning.
Color was just incredible!
Aroma: Had some dankness with topical/citrusy notes.
Flavor was fantastic!
Now wait till it has had enough time in the bottle.

Second tasting after 10 days in the bottle.

Color: Murky yellowy to almost straw
Aroma: Citrusy with some dankness
Mouthfeel: Soft and smooth
Taste: Just a wonderful balanced drinking beer with slight sweet finish.

If you try brewing this please let me know how it came out, and what if any changes you made that enhanced the beer.

I will be brewing this again in an effort to improve it.
