Wheat beers! (my least favorite style but i have extra wheat)

looks close to an American Wheat I just finished a keg of. I went 20% wheat malt and 10% flakes and came in at 33 IBU using all Tetnanger 60/15/wpool. Used chico, lagered and drank like a pilsner. Mine came out well. I used carapils but no crystal so that probably will push yours toward a pale ale. Also decocted mine. Have you done that hop combination before?
 
Speaking of wheat beers. I just picked up some more grains and plan to do my Schneider Weisse next. Last season when I was in Germany drank a ton of that stuff, on tap everywhere
 
That's kinda why I stopped doing the splits. More workq and have to kinda settle or compromise with what you get instead of design specific. Don't get me wrong the beer comes out fine
My system really works best at 10 gallon batches. I can do a 5 gallon high gravity and get decent efficiency but my mash tun doesn't like half batches of the typically sub-.060 beers that I brew the most - grain bed just isn't deep enough to give me a good sparge. I can mash to the max and top up for a 15 gallon batch or mash big enough to get a decent 3-way split without adding extract if needed but if I want 5-ers, splitting is my best strategy. I can nail it pretty well even with fairly different styles by mashing for the higher gravity style and diluting slightly for the lower gravity. Some styles naturally work together easily - Witbier and session Hazy Pale is a go-to or Belgian Pale/Irish Red are nearly identical except for yeast. I've done my IPA-Stout split and my American Amber/Irish Red enough times to know that it gets good results.
It's definitely a lot easier when I go ahead and put up 10-gallon batch of just about anything. :) If I had the right size temp-controlled fermenters, I'd do 10s exclusively, I think. Working on that. :)
 
I think you'll have a nice little hazy pale out of that. I don't know how well that Voss drops and clears but between a little chill-haze from the wheat and a little cloudiness from the hops, I bet there'll be enough haze to call it out. :)
 
Do you need the Dextra with that much wheat? I'm biased because I'm not a big fan of Kviek, but have you thought about running the Chico yeast with that? I like the Mosaic.

I read that wheat wasn't really foam positive in higher %s(I could be wrong though??). So basically the dextrin is hedging my bets on lacing the glass if that makes sense. Plus it cuts into the total 2row down a little

Do you have hazy yeast?

My lhbs recommends to always use some rice hulls when brewing anything with a notable amount of wheat.
I think it depends on your system.
I have actually made a beer with just AP flour :)
Only possible with biab and even then it was a bit of a mess, but fun!
 
Hey all,

I am trying to use up some wheat malt before i order more grain at the end of next week. I am generally not a huge fan of wheat beers in general, but i have extra wheat malt and not enough flaked oats to make many of my normal recipes.

The hops are copied from a previous recipe, but i dont think they look terrible for the style/abv. Let me know where you would go with this. Most likely use Chico to ferment this out, but i have Voss or a couple others on hand. I also have Apricot and Blood orange on hand.

If you have some chocolate & Cara you could try a dunkelweizen. Who doesn’t like chocolate around valentines?

The hazy yeast was the first thing I thought of with the Mosaic, but I think Big Bre uses simpler yeasts. WLP 067 would be awesome! Probably expensive though.
 
That beer is going to drop clear unless you use a heffe yeast and more wheat. I say make the American wheat with the apricot and smoke. People will be interested in that than another Hazy Pale Ale

He needs the right yeast for any -weitzen beer. He doesn’t want to get any. And so it’ll be an ale.

Apex all the way! It would cost me atleast $200 to get enough liquid yeast for this one batch. and the fancy dried yeasts arent really that much better then the basics from Apex. I could probably get some dried Hefe/wit yeast, but im pressed for time on this. shipping would be a week and hard to justify vs using what i have on hand. I have a pitch of Apex's London hazy yeast on hand. wasnt really impressed with it vs Voss to be honest.

I can actually reliably get lasting hazy formation with voss and a dryhop which is crazy.

same as before.

1. Med Juicy IPA 6.4% followed by another medium Juicy IPA at 6.7% that is crashing right now.
2. Oyster stout 5.9%
3 Painkiller Sour 5.4% <-Gotta brew a new batch of sour before i leave for vacay
4. Session IPA 5.3%(year around beer) <-gotta brew before i leave
5. Golden lager 5.1%(year arounder) <-gotta brew a double batch before i leave
6. ESB 5.9% Followed by the Kolsch at 5.6%
7. Belgian Double 7.2%
8. Dh/OP Amber ale 5.7%

leaving on next thursday. gotta order grain. pack all 3 tanks, brew 4 times(3 tanks to clean)...gonna be a busy couple weeks.
 
That looks well rounded, I'd get flight
I think the smoked apricot would fit in there.
I like that it's not all IPA. When I go to a pub and I see all IPA it's just so boring. But I guess that's what the mob likes or think they like

I don't really like ipas in general. Summer I run a high abv ipa in addition to the medium and session but that is for the tourists
