I am eating late (too dark to take piccies worth viewing) so it's going to be a cheeseboard with some Ciders. I have started with the test bottle of my Hop Oaked Scrumpy, bottled within the last fortnight, ABV: 9%. Not getting much of the oak as yet but the Citra and Admiral have combined nicely, picking up grapefruit and orange (peel) above a moderate bitterness and sweetnotes. Nicely carbed, very refreshing and heady with it. Feels like a success to look forward to ice cold in the height of summer.
 
Alright now for how it tastes… if I was trying to clone it I would brew my Holschuh Biergarten….and either lower my hop rate by 5 ibu or add a little caramunich
 
Pics will have to wait until the beers clear but yesterday I kegged the IPA and American Amber that I brewed in a split batch. I am in the process of sampling abundantly. They're both going to be pretty great when they get to where they need to be.

The IPA - West Coast style - which I hope will drop really clear is already pretty spot on in terms of flavor. The traditional northwest hops give it a traditional flavor and bitterness and the Galaxy in the dryhop give it some great tropical/stone fruit flavor and aroma. Almost all Rahr Pale Ale malt with a hit of Victory gave it a fantastic color.

The Amber is going to be a winner as well. The same traditional C-hops really work with the dark malt/chocolate/hint of roast flavor. It didn't attenuate quite to where I'd like but the slight extra sweetness is not unwelcome in the context of the strong flavors. I used Maribrew 497 (San Francisco Lager strain?) which I like for crisp-bodied ales. It works nicely at relatively high temps but leaves a bland fruitiness (I always think "flabby") that has to settle out a little. I threw in some Bio-Fine and it seems to be coming along just fine. When I spend time in the PNW during the summer, there are always good Amber Ales on tap most places. The "commercial" ones - Mack and Jack, Alaskan Amber, Full Sail - tend to be a little sweet and malty but the smaller breweries usually produce something a little more hoppy and crisp. That's what I was shooting for and I think it's pretty close.

I took a detour yesterday to pick up some kosher wine but had to check out the store's beer selection. After turning on the clerk to dark ales...he was a newbie...I found this 6 of pints. I figured it hadda be this Peabody's attempt at Natti Bo....a Baltimore favorite...think yellow fizzie beer but better.

From earlier. A Czech Pale Lager. Yummy as hell and only 4.8. The second one I had them put it in a bigger glass and pour some foam on it. OMG, that tasted good. This is the place I want to meet Josh at if he has time when down here.
