Went to a homebrew festival yesterday and got to try some very nice stuff that gave me some more ideas. Went to a brewery ealier today, but also picked up a local Festbier that I am quite find of at Total Wine.

Thanks Roadie. It's 85% Maris Otter and 15% pale rye malt
I’m a big fan of MO. Very unique flavor and nice color without help. Was the rye to busy up the head? Just curious what your targets were with the ingredients. What hops did you use? That would be delicious with a load of citra or mosaic dry hopped. Maybe an ounce spread through the boil and another half ounce dry hop. Nice and juicy hop flavor, but not bitey bitter. Might plagiarize your malt bill for a yeast/hop experiment.

I used CTZ at the top of the boil for around 30 IBUs and then 7 oz of fresh Cascade hop cones 5 minutes from the end. A dry hop addition probably would've helped this one, but I was curious what the late boil hop cones would do

I like using pale rye in pale ales because it acts like a light crystal malt plus some added body and proteins for head formation

What was your target IBU? 30’s is about my speed. 40’s get me thinking earwax unless there’s a really tasty malt to offset the bitterness. I tried really hard, but simply could not finish off a pint of Guinness at the brewery in Dublin. I like the malt in it, but the bitterness is overwhelming.
