What are Mounted Kettle Thermometers For?

Kettle-mounted thermometers are mainly useful for monitoring water and wort temperature before boiling, but they aren’t very accurate for mashing due to temperature variations within the kettle. Additionally, their high placement often makes them ineffective for smaller batches. For better accuracy, using a digital thermometer or a long-stem probe to check multiple points in the liquid is a better alternative.

Depend on your setup. i have a low mount probe in the kettle, liquid exit temp from the kettle and liquid temp exiting the HERMs coil.

The software takes all those temp to modify heat application.
 
What are the kettle thermometers that get mounted into brew kettles (the ones you screw in through a port and have a probe that goes into the kettle) for?
And I thought they were for your mash paddles and spoons to bang into....
 
I thought of this thread over the weekend as I was doing a water test for a new 3 vessel system. And for me, these analogue probes are the source of truth. I've seen too many digital probes that are not accurate. Case in point, the USB/Digital probes that came with this system are 2 degrees off, All three of them. I ran 3 water tests at different ranges.
60 minute mash at 149/147 (analog/digital)
60 minute mash at 153/151
60 minute boil at 210/208
There's a simple calibration method through the Control Panel, but all that does is ensure they are all reading the same temp. Haven't figured out how to get into the advanced settings to adjust the digital settings.
 
I know what you mean. On occasion the digital temp probe on my car gives some interesting readings. But, I have a question, how did you determine that the digital probe was incorrect instead of the analog?

At my elevation water boils at 210. I ran a vigorous boil for 60 minutes and the digital probes never got above 208, whereas my analog probe was sitting at 210.
