I'll have to check if one is for your pastrami.Just pulled a 4.5 lb. slab of brisket pastrami off the Traeger and put it into the fridge to dry out overnight. Can't wait for a sammich on rye with American cheese, yellow mustard and some Kosher Dill slices.

I'm hoping I can get up to my friend's ranch before too long and see if I can scare up a pig or two. When it comes right down to it, it's probably not cheaper to hunt than buy meat, but wild pork is mighty good in a sausage - especially for boudin.Will be keeping an eye out for a good deal on pork butts.
Could you hunt with a medium recoil handgun? I use a Contender in both carbine length and 14" scoped handgun configuration in various chamberings. Cartridges based on 223 for the Contender are mild in recoil and capable of taking game at up to 200 yards with the right set up.Have a prosthetic reverse shoulder implant and can't shoulder a rifle or shotgun, so my hunting days are over.

I can hit a full size pick up at about 15 yards with my Glock model 22 right handed All I'd likely accomplish is pissing a tusker off and getting gored.
