When I visited the brewery I had the impression that all of the base malt in it was smoked.
I'm also positive that it goes through a decoction or two.
As much as I pried, the retired Brew Master wasn't sharing any secrets.
So, I believe that's where my starting point will be.

Here's my starting point. For some reason the water calc won't link so although I built it, it doesn't show.
I'll also be doing a single decoction on this.
