I'm definitely curious to see how this turns out for everyone, I'm not going to try anything that hoppy until the spring.
 
Remember if you dry hop at high krausen or at the end the c02 produced during fermentation will drive off any O2 as well.
When you dry hop you will notice a bit of activity in the fermenter as well.

A local brewery (Gate City) has a beer named Citras Maximus which is quite similar. It is one of my favorites, and now so is Wayner's.

Where did the name come from?

The name came from my late mom’s nickname for me, Wayner. It’s better than my brother’s nickname for me, Wayne the Pain.

I just figured you were from the south, and instead of weiner you called it wayner.
 
My Wayners is riding with the gelatin @34 F. It was very "Hazy" when I Dry Hopped. I Fined this pm, hoping it drops clearer.
 
That fermonster I got has some space for them to settle so I shouldn’t have a big issue clogging the spigot. Reading this thread I won’t use a bag. I do use a bag when boiling though.
I routinely add drop hops without doing anything other than opening the lid, dropping them in, and putting the lid back on. I do spray sanitizer before removing the lid.

Just put something in place to tip the fermenter so that everything that settles out settles away from the spigot.
 
I have a mesh insert bag for the Fermonster, and was wondering if there was any downside to adding it (after sterilizing) to the fermenter with the chilled wort before pitching yeast? Then when it's time to dry hop, the hop enclosure is all ready to go and I can drop the hops in through the bung hole, and then remove at packaging.

Could the mesh bag physically impede the yeast during active fermentation while they're rising and falling in the vessel?

I don't see any reason why you couldn't do this, but I also don't see any reason that you need to do this. Just my $0.02
 
So ferment 3 days and add dry hops. Then after 4 days rack to a keg? I avoid secondaries like I do covid :)
I would cold crash for 3+ days before racking to keg, this compacts the trub, yeast, and hop debris

Oh its lovely!
Aroma Citrusy and that lovely mosaic fruit smell. Flavour is more bold I'm finding than the aroma. I'm digging the nice malt background almost a honey like malt aroma.
This will meld better I'm thinking with another week on it and some better carbonation.
It's quite full on In ya face straight out the tap
Theres still a bit of hop bite going on.

Top Drop gave the missus a sniff ah its fruity and a bit Vodkary:D I think she likes it lol...
 
This is my next brew. Friday or Saturday is my guess. Still going back and forth on hops. I knew that I had no Citra and settled on Simcoe in its place. I was 99% sure that I had Mosaic. I was either wrong or the Mosaic ran to the very back of the freezer knowing that death in a boiling vat of wort was imminent. I think I'll use 3 hops. Simcoe and Centennial in the whirlpool and dry hop with Simcoe and Amarillo.
 
Wow @Trialben that's beautiful color. How clear did it turn out? Mine is resting in the fridge, seemed cloudy when I moved it to Secondary to Dry Hop. After 3 days, I decided to try to clear it up with some Gelitan. Now day 2, layer developing on the bottom of carboy but still can't see a Maglite through it.
@HighVoltageMan! Is Wayners APA supposed to be clear?

No way will you get it to.clear all them hops you added are what's causing the haze. I know that verdant yeast that I used doesnt flock to easily neither after looking at my yeast pinch sample cloudy as all get out.
I used caraffa 2 so might just add that extra colour.
This was my very first draw from the keg.
Yeah it looks like it's got a nice blush going on there I'll sample some more this arvo an flick a pic.
Its strong stuff not used to these 6 percenters:).

it looks like this 7-8 days from brew day. I’ve never had trouble clearing it. If you clear in the keg, the the first beers are nasty. In the past I would clear it in the carboy, now I use a unitank made from a sanke keg and use the Williams top draw to get a clear beer very quickly.
 
You got me curious, so I went and took a sample from the fermenter which is sitting at 2C at the moment. If you recall, I was a bit concerned about it because the S-04 fermented down 1.006. It tastes real good. There is wee bit of, I believe yeast that came out. I won't bother with any more finings. Enough chatter, here it is.

Well I'm proved wrong wow that's brite pretty quick.
Heres my sample 2nd day in keg. No where near as clear as yours. But I bet this verdant yeast dont drop like S04.

Regardless of appearance I had two of these this evening long lingering hop flavour a delight.

There is always going to be some hop haze in it and it will never be polished, but it can get fairly clear really fast with WLP007 or SO4, whirlfloc, crash cooling and gelatin.

@HighVoltageMan! That's beautiful. I used WLP007, crash cooling & Gelatin. Day 3 on Gelatin & the top 1/8th of the carboy is lightening up but the rest is opaque. Color is gorgeous. I'll give it a couple more days & move it to a keg & I will look into the top draw pick up.
