House ale yeast opinions! US-05 vs. ???

S05 is a great yeast if you want something clean. That is how I started learning about making different styles. Having said that, I would buy yeast depending on what you are making. You can make a decent American Stout/ Porter with S05, but I would prefer to drink the Irish/English version.

Yup Nova Lager this year 10generations I went if not more.

I found it great in a range of styles.

I rekon 34/70 would make a great house yeast you can ferment it cool for lager or warm for ales.
I really like Novalager so far. I think I'm on generation 4 now? Doing a Vienna lager after I left the starter on the stir plate over Christmas, so it's been spinning for 10 days? Pitched it last night and the brew bucket is bubbling away now.

For a brewery yeah I'd be way more careful, for home brew? Let her buck. My basement is around 18C all the time and I haven't bothered to temp control Nova so far.

Yeah it's a great forgiving yeast strain.
Glad your getting good results with it man!

Iv gotten 5 repitches probably 6 tanks including a split or 2. My complaint is that it is a bit fruity for my tastes/styles that im shooting for. Im brewing a lager today and giving APEX Munich Lager yeast a try.

I tried Apex Voss in my stout and it was unimpressive. That may have been the recipe, probably was, but i only got about 70% atten.
