Galaxy vs Mosaic Dry Hop in a Pale Ale

I like Idaho 7, have used in several pale ales. I think I might also go simcoe on what you have - but let’s be real; all the hops you have to choose from will make an excellent contribution.
simcoe over the amarillo or the citra?

i only have 22 ozs of amarillo so it is a fairly light % compared the citra/idaho7. i have an unopened box of simcoe.

I also have chinook, ekuanot, azacca, sabro, cascade, mosaic, cashmere, and a few others on hand

just hit kettle-full so im roughly 30 mins from needing to get them pulled out.
 
I think with Idaho 7 my next choice would be simcoe over citra, not over the Amarillo.
I’ve been meaning to pick up some cashmere and I’m getting some rhizomes for this year’s planting. I’m hoping they have at least half the heat tolerance of cascade.

Although I really like cascade because I can grow it, it doesn’t have the same IBU potential as the bigger AA hops. I used mosaic to good effect recently too. I think restraint is needed with Citra. I’ve had 2 WCIPAs where I used citra without enough restraint- the first was too bitter unless you were a true hop head and the 2nd was smelled like a fresh grapefruit. NOT that there’s anything wrong with that, but I was trying to get a bit more balance and subtlety with it. I drank them both, and shared with hop head friends but they were too much for the majority of the local audience.

So that’s my few pieces of eight.
If you do go with citra, just be respectful of it. :)

I like the Galaxy, but honestly you can't go wrong with either.
Overall, Mosaic is one, if not my favorite hop and I use it often, but I like the nose of the Galaxy a tiny bit more.
