Any issues with using a spunding valve instead of a blow off tube? Will this naturally carb the beer?
And whats the best pressure to set the valve at ?
I'm not talking about pressure fermenting just using a spunding valve at a set relief pressure.

No, that works great. I use light pressure, but I don't do it to avoid esters so someone who wants to ferment, say, a lager at room temperature, will have a different answer than me. I only use like 2-3 psi. It will not carb the beer much.
 
There us a (very) minor ‘danger’ if the krausen rises enough to enter and clog the spunding valve, meaning excessive pressure can build up in the keg. I only mention it for completeness, since:

It is unlikely
The kegs are pretty strong, and
Higher pressure suppresses yeast activity … kind of self-limiting

But don’t try to ferment 5 gallons in a 5 gallon keg. Leave a good bit of head space there.
