Bitterness

Yes, that is a good new lesson to learn. Some buy a larger amount of hops - maybe half kilo - because the price per gram is less, and the AA stays the same until they are gone.
 
My brew store used to post AA for their hops. They can't anymore post Covid. They are changing all the time depending on suppliers. I normally use lower AA hops, so I have been buying an extra 1/2 ounce just in case.
 
If I understand correctly: it's only with dry hop that the aa percentage is not important
 
So if the AA is high i can use less quantity for same bitterness (60 minutes boil) and the beer production costs is smaller right?

You aren't isomerizing them, so it just adds aroma and flavor

Yes, higher the AA the more bitter you get for a given amount.
