2024 4th Quarter recipe

Might be fun to do that with WLP002. Mine probably wouldn't be THAT mild though:)

Yooper, I was bragging to Josh the other night about Homestate which is about 15 minutes from the west end of Disney. They do a Pub Ale which is in the 4s, the color of an ESB, and it is outstanding. It would be an ESB except for the alcohol.
Really impressed with Homestate, they make a number of really good lagers

I have used WLP002 the most, but I see in my notes that in 2008 I did use dry nottingham yeast at 62F and it came out great too.

Looks really good. My dark mild didn't turn out that great, Gonna try this

Please let me know what you think- I really love this beer and it’s pretty cheap to make since it doesn’t use much malt. Dry yeast used to be really cheap when I did this back in the 2006-2008 years so it used to be more of a ‘leftover beer’. But now since dry yeast is almost as expensive as liquid yeast, my preference for yeast is wlp002. I fermented it cool at 62F using nottingham, and that really kept esters low but it still had character so those were good too.

I'm drinking one now, love the fact that I can drink 3 and no buzz lol

Really?
I find one pack of dry yeast to be about 1/3 the cost of White Labs and half that of Wyeast or Imperial.
Or is this a cell count thing? I have to admit, I don't pay much attention to cell count.

Dry yeast used to be really really cheap. I mean, like under $1. :)

For this beer, you don’t need a very high cell count. White labs has ‘pure pitches’ packages now which I guess is better for larger batches and a higher OG but not really needed in such a small beer. When I started using more liquid yeast about 17 years ago, there were a lot less types around and they were a lot more expensive so I started harvesting and saving my favorite yeast strains. Then, it was cheaper per use of course.

I tend to only buy yeast about twice a year, except for a one-off like this summer’s German pilsner when I bought a German lager strain. Right now I happen to have two strains on hand, and I don’t really like the one US strain I have (Omega yeast OLY-004) but that’s the brand available at Ritebrew.com and I tried it.

Sorry to go off topic like that- I just realized how long I’ve been brewing. I always hoped to live to grow old. I just didn’t want it to happen so FAST!

I find dry to been slightly cheaper. Packet of notty or us05 is about $6-7. Liquid is usually about $12

… and white labs pure pitch packages are edging up to $20. Yikes!

Not sure where you're shopping, but we sell Safale 05 for $3.99 and Purepitch for $14.99.
Also the Apex San Diego and London are $3.99

Well it's in the fermenter! Came out at 5gals @ 1.040.

I was going to say I got Purepitch for about $13 a month ago. That is a double pitch package too. I would love to use 004 in a beer like that, but I dont think they sell a smaller version anymore, at least a my homebrew store.

Mine is about done fermenting. i’ll get it kegged this weekend. I used Verdant
