Fast Lager

What if I use fermentor for starter?
Brew a 15 liters of wort, use 5 liters for start let it ferment 24 hours and then put inside 10 liters more
Is that a good way?

Do it like an ale, but pitch very heavy. You don't need a starter with a shitload of yeast. Opening fermenters for long periods of time during fermentation is asking for an infection.

You can't necessarily be confident of cell count with that method. Just use dry yeast and pitch the appropriate amount. It works.

I don't have enough yeast,
I just have a pack of 11g

I see...When I have been in that situation, I've brewed a starter beer and fermented at a low ale temperature - very basic light blonde using 2-row or Pilsner or even extract and very mild hops.
About 10 liters of 1.040-1.045 will ferment very nicely with 34/70. It only takes a few days to reach gravity and can be crashed and racked off, leaving the perfect amount of slurry for a 20 to 25 liter batch of 1.050-1.055 wort to be fermented at 55F to 60F. You can use the Yeast Calculator to determine exactly the amounts needed.
The starter beer is ready for packaging very quickly and will be a very nice beer on it's own. :)

My golden lager is a consistent 10 day grain to glass. i have brewed it about 40 times in slightly different versions. I pitch 250g of apex munich dry yeast and ferment between 62-66F. its clear and clean after sitting for a day or 2 after carbonation. Lagering time improves it, but i regularly dont have time for that.

I just got a Spunding valve and i am thinking that i will brew a single of the golden lager and pressure ferment it. Need to do research on settings for the Spunding, but shouldnt be terribly difficult! hopefully it will yield an even cleaner faster lager that is self carbonated!

If the 5 and 10 liter batches are separate - meaning two batches, a day or so apart - that is like a big starter, but you have to ferment at normal lager temperatures. But if it is all one batch, keeping that extra 10 liters from getting infected can be a challenge.

this is common in bigger breweries because fresh pitches are so expensive and you are already double batching to fill tanks.

If you are tossing a new pitch you generally brew one batch on the first day and then the second batch the following day to fill the tank.

obviously the sanitation is very different at scale.

Big breweries also ferment lagers under pressure, you can use a higher temperature to speed the fermentation and still suppress esters for a clean beer.

just got in a spunding valve, brewing a double batch of an updated golden lager tomorrow and wednesday. gotta do some reading on settings!
