Description: "This is a dual purpose hop that is well-suited for big, heavy-handed brews. It was developed by The New Zealand Institute for Plant & Food Research and boasts big Alpha Acids (16 - 19%). Because of the high Alpha Acids, Waimea works well as a bittering hop for big IPAs. Waimea's aroma and flavor is a pleasant balance of fresh citrus and resinous pine. Aromas of tangerine, grapefruit, and pomelo can be achieved through dry-hopping and whirlpool additions. "
