Was meant to add 250g of molasses but forgot and did 300g. Was meant to add at end of boil, but forgot and added to FV. Noted a peculiar umami aroma, even before the boil and continuing into the FV. Almost mushroomy. Could be good or bad. Very black colour, like oil. Enough bitterness and roastiness that it doesn't even seem super sweet at the OG.
Pitched ~3g Stalljen dried kveik flakes, first use. TC set to chamber @ 20C (let rise) No stout about it 21.5kg 1.054@20 pH 5.38
No stout about it A: malty, sweet, syrupy, liquorice, molasses, caramel, roast A: dark brown to black with tan head. Hazy, so muddled highlights. Not much head due to low carbonation, but the part that forms, lasts. F: balanced, towards dry. Nice robust bitterness and roastiness, makes for a nice dry stout. Still entirely malt focused, predominantly roast, and molasses. Initially I thought too much molasses, but actually I mightn'treduce it much. Perhaps 300g to 200g. Could do with some layered malt complexity. Aftertaste leaves a nice spicy/herbal hop flavour. M: low carbonion, I'd shoot a bit higher but enjoyable. light bodied. Slightly bitter finish. O: I really like this. Malt driven and toasty, but light bodied and drjnkable. Very much focuses on the molasses, which could be reduced and some malty layered complexity added. NB: as it warms, the molasses is yet more pronounced. It starts to be perceived as sweeter and fuller bodied.
Molasses flavour has subdued a lot even with a little age. It could still come subtly down, but actually quite appropriate and complex.
