Mash start at 0900 with 4kg Weyermann Pilsner Malt, 2kg Gladfield Ale Malt and 150gms Gladfield Dark Crystal Malt in 17L water treated with 3/4tsp Epsom Salts and 3/4tsp Gypsum. Mash start average temp 68C - average end temp 64-65C.
Start sparge 1100 return 1st 2Litres back to Tun then run and collect 31L.
Fire up gas at 1130 with 25L add another 6L = 31L.
Boil at 1200 add 25gms Pacific Gem in Spider.
Put cooling coil in at 1305. Add 24gms Fuggles late addition at 1325 for last 5 mins of boil.
Flame out at 1330 add another 25gms Fuggles for hopback.
Start cooling with 2 coils and 2 fans at 1330. 54C at 1400. 35-40C at 1415. 1445 30-33C. 1500 25-30C. Stop water cooling at 1510 - keep fans going.
Start runoff to MJ2 at 1510. Collect 25L OG 1058/59 at 22C giving 75% efficiency.
Pitch yeast ( 1 sachet US05 ex 31, 33 and 34 ) at 1700.
Go well Brew35.
Saturday 25/4 0800 bubbling away well every 1sec.
1400 change airlock as yeast bubbling up into 1st airlock due to 25L high wort level in MJ2 - Yeast smell all good none of the slightly mussel smell from previous brew.
Tuesday 28/4 bubbling every 3 secs - tasting good still very cloudy.
Wed 29/4 still bubbling every 4 seconds tastes and smells good. Gravity 1024 and very cloudy/ yeasty with yeast taste still. Add 50gms Wakatu for dry hop.
Thurs 30/4 raise temp to 23C for D. Rest. Still bubbling every 3 secs taste is good still very cloudy/ yeasty.
Friday 1/5 still bubbling every 3 secs and still has yeast crop on top but gravity has dropped to 1014-15. Still tasting delicious with good malt/ hop balance with stonefruit and slight citrus flavour but difficult to pick any definite dry hop influence.
Saturday 2/5 bubbling less intense still every 4 secs. Drop temp to 3C to cold crash.
Tuesday 1300 Bottle 31 x 750ml = 23.25L - Tastes really good well rounded great mouth feel with Wakatu dry hop fresh hop notes coming through. Be interesting to taste after some bottle condition.
Drink last bottle 1st May2021 - exceptional clean ESB Delicious.
