Was a quicker mash step up 53 to 66 over forty mins then moved up to a boil to mash out. Enzyme test showed the malt Enzyme wasn't fully converted .
Centennial can be swaped for cascade I might try mosaic next time instead of simcoe. As the same as shaping Chinook for cascade or waimae
