Notes

First dry hop biotransformation. 2 away from finish at as soon as two days is up transfer to keg Second dry hop in keg

Water is Melbourne tap with 10.5 g of calcium chirid

Was a quicker mash step up 53 to 66 over forty mins then moved up to a boil to mash out. Enzyme test showed the malt Enzyme wasn't fully converted .

Centennial can be swaped for cascade I might try mosaic next time instead of simcoe. As the same as shaping Chinook for cascade or waimae

Will add tasting notes
