After wort collection (28 gallons), 1/2 was removed and the 1/2 in the boil kettle was treated with 1 oz. of Brewcraft
liquid glucoamylase for 30 min. Then that half was brought to a boil to stop the reaction. Then the other half was returned to kettle and boil started.
