Notes

Used Clark's sap from North Hoosac Road. Approximately 5 gallons. Boiled 2 gallons and put in sterilized growlers to cool. will add to the wort at cooling time. Added Clarity Ferm. The OG was hard to read but looked to be closer to 1.072, which is interesting because this calculator doesn't take into consideration the sugar content of the sap. I didn't get a chance to measure that pre-boil. FG was 1.014 so in line with the calculations here. Taste was good, with little throat bitterness despite the high IBU. After secondary, there was not much actual beer - maybe 3 to 3.5 gallons.
