Pitched Yeast of a new wlp-500 pack due to the starter yeast being dead. So this only got 1 vial of yeast. SG includes the 1 pound of honey that will be added 3 days after fermentation begins.
Airlock is bubbling every second now. Digital temp shows 75.5 and the temp strip on the fermenter shows 76-77. Adjusted the digital controller to 74.5 to keep it a little low.
Added 1 pound of walker honey. Boiled it and cooled it to 80 degrees and pitched it into the fermenter which actually was a high krausen when I opened it. This should add another 7 points to the OG. I have already gone back and edited the previous comments to account for the new SG. Also increased the temp to 74.5 even though the digital read showed about 75.5 Smelled like bananas and bubble gum.
Temp was at 75, so i bumped it to 76.1 and the fermenter heater pad kicked on. It is bubbling about every 2 or 3 seconds now.
Hydrometer shows 1.010 and refractometer shows 10.15 or so. After the adjustment for the refractometer, it is at 1.012, which is pretty close. Terrible solvent flavor going on. Sure hope I don't have to dump this one.

Trying to get a banana bomb with GP base and a little wheat for head retention. Will add 1/2 pound of honey to this beer at flameout or possibly 3 days into fermentation.
Was going to mix Weihenstephan with Westmalle, but decided to try WLP500 (Chimay) at a high starting temp of 70 and let it free rise to about 78 over 5 days.
Will do a 2 liter starter and split it in half for future use.
