Notes
Mesquite Beans:
- Dried to start (Should to be dry at harvest)
- Rinsed and broke whole pods into about 0.5 inch pieces
- Bulk of beans (>80%) went straight into steeping, while the rest were roasted in oven at 250F until inside of pods just started to brown
- Steep beans in slow cooker (set to low) with about the same water/bean consistency that you would see in a mash
- Steep for 3 - 4 hours and rinse with hot water into a pot
- Boil in a pot to reduce volume. I try to reduce volume about 50%
- Add bean extract at 15min in kettle
