Notes

Cut up and de-seed a fresh Watermelon into 1 inch cubes.

NO Peel - pink flesh only.

Soak the watermelon in in enough gin to cover for 1 - 2 days. Cover container.

Strain away Gin - and for god's sake DONT throw it!!
Hey presto, watermelon gin as a bi-product - amazing!

Place soaked Watermelon & Lime zest into secondary for 2 - 3 days

Clear & keg

Add approximatley 2% to the abv as the gin will continue into the finished beer.
