Ferment at 66F until ~50% attenuation then allow to free rise to low 70s.

After fermentation completes, rack ~3 gal to a keg with 2 oz of medium toast American oak (boil briefly and discard water, then soak in tequila) and Omega All the Bretts. Let condition for 1-2 months or until beer is fully dry and funky.

Package remaining beer to ~3 vol CO2.
