An iron chef challenge beer. (Victory malt & Falconers Flight hops)
Big sweet lager with major toast and smoke flavor. Low bittering and high aroma from hops. Lager for smoothness. Use apple or apricot flavoring, too.
Single infusion mash at 152F
Use balanced water profile. Smoked malt makes this beer seem sweeter than regular two-row.
Split batch in two after fermentation and treat one with Hazelnut extract and the other with pineapple extract. Lager for two weeks.
