Notes
-Dry Hop with 2 oz of simcoe and strata at the tail end of fermentation (maybe in a keg)
-Transfer to another keg with 1 oz each of the other hops
Heat 4 gallons to 167F. Mash for 60 minutes. Heat up to 170. Sparge with 2.5 gallons of room temp water.
Add additional 1 gallon to the boil kettle, without sparging.
Add First Wort hops.
Boil
Finings and yeast nutrient and salts at 20 minutes left.
Flameout.
Chilled to 160 (was aiming for 180). Hop stand for 30+ minutes.
Chilled to ~85 and put in fermenter.
