Vodka tincture of pasilla pepper, vanilla bean, cinnamon, and nutmeg. All plus coffee added to primary.
4.0 oz Cocoa Nibs - (Peru) 10.0 days
24.0 oz Chicory coffee, cold brewed 24oz – (French) 5.0 days
2.5 each Vanilla Beans. sliced/Cut into pieces- (Madagascar) 10.0 days
1.5 each Pasilla Chili, chopped - (Mexico) 10.0 days
1/8 tsp Nutmeg, fresh ground - (India) 10.0 days
2.0 Cinnamon Sticks, chopped not ground - (Cylon) 10.0 days
Roast the cocoa nibs in the oven at 350° for 5 min at a time tasting until you get the chocolate flavor you want. "No roast, no flavor"
The longer this sits the better it gets. Initially it will taste like a cup of cold coffee. After several months all the flavors come out, it mellows and is an amazing brew. Credit to my son for the ingredients.
