Notes
Cut and cube pumpkin, drizzle with maple syrup and brown sugar. Bake at 350 F (177C) for 20 to 30 minutes until skin starts to brown and flesh becomes soft.
Once skin is removed, move to cooking pot, add 1-2 gallons water, 1lb brown sugar, spices and low boil for 60 minutes.
Add to bucket, add honey, and water to 5 gallons. Pitch yeast
2 days in- add 1tsp yeast nutrient
Ferment 1-2 months in primary
Transfer to secondary, add smoked oak chips. Add toasted pecans for 14 days.
