Heated 2 gals. Of water to ~ 125 deg F.
Softened the honey in hot water.
Mixed the honey into the water until thoroughly combined.
Reconstituted 2 packets of yeast.
Added one stick of cinnamon to the fermenter.
(Will add a vanilla pod when aging)
Cooled the wort to 80 deg F.
Added the yeast.
OG 1.123, 16.2% ABV possible.
