Brew19 - Thursday 8th August. Try for similar to Brew13 - hoppy and delicious. Bittering hops a bit different with 80gms ( old ) Wakatu instead of 20gms Pacific gem≈ 80gms and 10 gms Citra to boost IBU's.
Mash start 0830 with 4.5kg Gladfield Ale malt and 100gms Weyermann Special in 13-14 litres untreated filtered water. Temp start a little high 69-72 so dump 1 litre cold water in to reduce to 67C at 0840. Sparging start at 1030 - collect 28.5L.
Fire up gas at 1110 with 21L boil at 1145.
Hops (80gm Wakatu, 10gm Citra, 10gm Mosaic ) into spider in at 1140. Cooling coil in at 1300
Flame out at 1320. Start cooling at 1325. Start runoff to MJ fermenter at 1420. OG 1050.
Collect 21 Litres at 1540 into fridge.
MJ's M44 US West Coast Yeast ( saturated for 1.5hrs ) pitched 2025 at 22C.
Go Well Brew19.
Friday 9th - At 16-1700 very slow bubbling 30secs - 1 minute apart.
Saturday 10th 0800 bubbling along well - every 4-5 secs.
Monday 12/8 bubbling every 8-10 secs temp 18-20C. Fridge temp 18C.
Tuesday 13/8 Still bubbling every 15secs. Temp 18C, fridge 17C.
Wednesday 14th still bubbling every 15secs - move to warm fridge set to 22C for D Rest.
Thursday 14th bubbling every average 22secs. Temp 22c at 11.35.
Friday 15th at 1030 - slow bubbling every 30secs - 1 min. Temp 22C. Tasting - good bitterness, no off flavours.
Sunday 17th. Gravity 1014 - Rack into SS26 and Dry Hop with 50gms Mosaic, 50gms Citra and 30gms Wakatu.
Save yeast to sterilised jar.
Saturday 24th drop temp to 8C. Remove lots of floating hops. Looking a bit murky after hop removal.
Monday 26th Gravity 1014-16 - alcohol 4.73-4.99%. Looking much clearer compared to Saturday. Tastes great good hops eve more in smell during bottling.
Bottle - 23x750ml, 4x500ml = 19.25Litres. Good luck for an amazing hoppy brew19.
PROBLEM....Extreme gushing when opening bottles - flecks of hops and murkiness in pour tastes ok nice and hoppy but....
