Notes
I add the lemon thyme to give the beer a lemon and savoury flavour that goes well with the fruity flavours of the Nelson Sauvin hops, and the dry style of the beer.
Aim for a champagne in colour and make it crystal clear with Gletatin.
I add hops in the fermentation to reduce cool side oxidation.
