Notes
  • Pitched with a white oak log at ~76F.
  • Fermented at 74 - 76F
  • Will add wild mimosa blossom yeast at tail end of primary
  • Will add 1/2 gal of dry mimosa blossom wine
  • The straight un-mimosa'd ferment turned out so well that I couldn't bring myself to add the mimosa ferment to the whole thing. Instead, I split off about 1/2 gal into the 1/2 gal of mimosa for a roughly 50/50 blend.
