Notes
This is similar to an 1847 recipe from the William T Younger Brewery in Scotland. I’m using 8 pounds of malt instead of 7.5, and the bittering is the same at 35 IBU. SRM of 4 is also the same. I likely won’t achieve a pitch temperature of 58° F, however I will try to keep the fermentation below 68° F.
Brew day: July 20
Racked after one week
Bottling day: August 3
Prime with 6 oz. corn sugar boiled in 2 cups water
Crown seal color: gold
Yield: 59 bottles
OG = 1.046, FG = 1.008, 4.9% ABV
