Roast the pumpkin on a sheet pan until it starts to caramelize. Add in a hop bag for the last 30 minutes of the boil. Create a tincture with the pumpkin spice and vodka, or rum. Add in secondary to taste. This came out crystal clear, and very drinkable. Great fall beer.
