Add 1 sodium metabisulfite campden tablet to brew water. |
Notes
When fermentation is complete, pressurize tank to 5 psi and crash to 33°F.
When crash temp been reached add silicic acid (Biofine Clear) and let sit for 48 hours.
Dump yeast and trub and carbonate to 2.5 volumes (about 11 psi at 38°F/3°C) for 24 hours.
