Notes

3 Lb of honey mix with half-one gal of 90-100F Black tea untill disolved. Introduce to Fermentor with Remaning amount of cooled tea, Cucumber and Raisin. Once temp is right add yeast starter. Turn jug daily rouse yeast preferably mornings untill 2 days before racking. Add 4lb of honey, Cucumber and Raisin on day 3. Add Cucumber and Raisin on day 7 to help complete fermentation. 2 days after fermentation is complete cold crash and rack. Add remaing honey, lemon and Black tea to taste.
