Notes

10/5/19 Lynne Strong Pale Ale. 5.04kg Gladfield Malt.
Mash started at 0945 67C in 12 L water treated with 1/2 tsp of Calcium S and 1/2 teaspoon Magnesium S. Mash for 1 hour finish temp 65C.
Sparge for 1 hour using 18L water to collect total 25L for boil.
Fire up gas at 1145. Achieve boil at 1233. Copper chiller and 30gms Pacific Gem hops in at 1225. Flame out at 14.10 Wort chilling start at 1420. Chilling stopped at 1540 start racking into fermenter at 1545.
Gravity 1062 at 26C. Collect 18.5-19 Litres. Yeast ( 2 sachets US05 saturated in water 25C for 15 mins ) pitched 1730. Go well 11.
Tuesday 14/5 rack off yeast ( very liquid so not sure how useful ) and add 30gms Citra and 30gms Mosaic as dry hop. Still bubbling every 2 seconds after stirring in hops?? Bubbling settled down at 1200 to once every 1-2 secs. Wed 5/11 bubbling down to every 25secs.
Thursday 23/5. Final Gravity 1012-13 T 5C = 1011-12 =6.7-6.8%. Bottled - 22 x 750ml bottles = 16.5 litres.
