Notes
A tropical leaning double IPA showcasing a pretty simple grain bill that rips off Red Wheat from the usual White Wheat of a NEIPA, otherwise showcasing New Zealand hops. Dry hopped with tropical fruit in the secondary. Trying more of the amazing Omega line-up with Saisonstein's monster, a hybrid of Saison and Belgian yeasts which add tart, fruity, bubblegum flavors. Mash should be at 5.35 pH. Ferment first 3 days at 73F, then gradually raise to 78F by day 7 of primary. Should be complete by then, including a few days of rest at terminal gravity. Then it's off to Secondary for 5 - 7 days just to rest at 77F, then 7 days with juicy hops and fruits at ambient, around 73F. Recommend conditioning in keg for two to three weeks to age it a bit and knock off any residuals. A beer in time for June and sipping poolside.
