The calculations are broken, 24#s of honey disolved in to 6 gallons of water would be more like 1.14, using RS-212 it should ferment down to 1.02 and 16%abv. Im going to puree the blueberries, use half in the primary and half in the secondary. I might use lemon juice, lemon zest, and vanilla beans in secondary as well. Haven't decided yet.
I like blueberries because they bring some of their own tannin and acid so it doesn't end up tasting like a blueberry wine cooler. |
