Notes

First time making this "style". Its for my daughters wedding.

I know I must do a double mash, one with the wheat and pilsner and then the second added to the first with the acid malt.

Crush the Coriander and Salt just prior to the 15 minutes left in the boil addition. (note-You could bake the Coriander for 5 - 10 minutes to release the oils a bit more.)

Hops- I chose Tettnanger, but you could use any noble or equivalent. The goal is to keep the IBU's under 15.

Yeast- I chose Safale WB-06 because I prefer it, I have read about WLP029 or Wyeast 1007 as other options.

I will do a "Brew Session" to track the progress when I do this, so that it can be tracked on here.
