Notes

Water:
Was able to fit 11 gallons of water into mash
Retained 8 1/2 gallons post-mash
1 1/2 more gallons of water added, bringing pre-boil volume to 11

Mash:
Stirred vigorously for first 5 minutes
Stirred for 2 minutes every 15 minutes thereafter
No starch present after 90 minutes

Boil:
Added 5 drops of FermCapS at start of boil
Added Belgian Candi Sugar with 10 mins remaining
Added Chiller to sanitize with 10 mins remaining

Post-Boil:
~9 gallons remained in kettle
Chilled to 140 in 7-10 minutes
Removed chiller, started whirlpool, added WP hops
Covered and allowed whirlpool to go for 30 minutes
Chilled further to 70
Took OG reading of 1.073
Siphoned to kegs, pitched hops, pitched yeast
